Cheesy Stuffed Potatoes

In this recipe, the potato is scooped out, stuffed with cottage cheese and celery. Always keep a few boiled potatoes in your refrigerator to assemble this recipe quickly. Scooped out potatoes left-over from this recipe can be mashed and used for potato tikkis, a quick sandwich filling or as a vegetable.

Makes 8 stuffed potatoes
4 largeboiled and peeled potatoes
1/2 cup grated paneer (cottage cheese)
1/2 cup grated processed cheese
1 tbsp finely chopped green chillies
1 tbsp finely chopped celery
1 1/2 tsp dried oregano
salt to taste
melted butter for greasing
salt for sprinkling

Method
- Method
- Combine the paneer, cheese, green chillies, celery, oregano and salt in a bowl and mix well.
- Divide this stuffing into 8 equal portions and keep aside.
- Cut each potato vertically into 2 halves.
- Scoop the centre of each potato half a little, using a spoon so that a light depression is formed for the stuffing.
- Brush a little melted butter on each potato half and then sprinkle a little salt over them.
- Stuff each potato half with a portion of the prepared stuffing and place them on a greased baking tray.
- Bake in a pre-heated oven at 200 c (400 f) for 10 to 12 minutes.
- Serve immediately garnished with tomato ketchup.

A super creamy paneer and cheese filling, the taste of celery is so good in this recipe, i made this as a starter for my guest, and they loved the creamy taste. Taste best when straight from the oven.
Great starter recipe to make in a jiffy...I made it with left over potatoes and they turned out really good..I added more cheese than paneer...
