A wonderful ripe mango soup with a mixture of ginger, cucumber and mint.

Makes 4 serving
2 mangoes , peeled and cut into cubes
1 cucumber , peeled and cut into cubes
1 tbsp lemon juice
10 to 12 mint leaves (phudina)
1 tsp chopped ginger (adrak)
1 whole dry kashmiri red chilli
200 ml water
1 cup orange juice
1 tsp olive oil
salt to taste

- Method
- Combine all the ingredients and blend in a mixer until smooth.
- Strain and add the salt and mix well.
- Refrigerate and serve chilled.
