1 1/4 cups plain flour (maida)
1 1/2 tsp baking powder
3/4 cup butter
1 cup powdered sugar
3 eggs
1 tsp vanilla essence
6 tbsp milk

Tips to make the perfect sponge cake

  1. Make sure you sift the flour well. This step is very important as it makes the cake light and airy. 
  2. Beating of the butter with an electric beater and then adding the sugar is important to make the cake fluffy.
  3. After adding the eggs make sure you add a tbsp of flour, as said in the recipe, as this prevents curdling of the batter.
  4. While adding the remaining flour to the batter, use the cut and fold method to retain the airation.

  12. Beat with an electric beater till the egg is just mixed. You can also use a stand mixer fitted with the paddle attachment.
  13. Repeat steps 10 and 11 2 more times.

  15. Add the remaining flour. Add vanilla essence. It helps in removing the egg smell from cakes. You can use anything like rose water, lemon or orange peel, coffee water.
  16. Add milk.
  17. Fold gently using a spatula. Ensure you do not over mix at any stage or else the air will escape and result in a deflated cake.

My cake doesnt cook from the center and sinks as well in the middle. Please advice. I tried it twice and same thing happens.

   Cake making is an art and the size of the tin is very imp, if you use a smaller one than the mentioned size it will create the problem you faced and also make sure the oven is pre-heated and baked at a correct temp and also bake in the middle rack.
