Cottage Cheese and Cucumber Sandwich

Bored of your ‘everyday’ sandwich with sliced veggies? try this delicious open sandwich with a topping of grated paneer and chopped cucumber with curds for binding and green chillies for spice. Sprigs of parsley impart a herbed feel to the cottage cheese and cucumber sandwich. Prepare it with fresh ingredients and serve immediately.

Makes 4 open sandwiches
4 brown bread slices
butter for brushing
To Be Mixed Into A Topping
1/2 cup grated paneer (cottage cheese)
1/2 cup finely chopped cucumber
2 tbsp curds (dahi)
1 tsp finely chopped green chillies
salt to taste
For The Garnish
sprigs of parsley

- Method
- Divide the topping into 4 equal portions and keep aside.
- Cut out and discard the sides of the bread slices. Lightly butter them on one side.
- Put 1 portion of a topping on each buttered bread slice and spread it evenly.
- Serve immediately garnished with a sprig of parsley.
