Curry Chat recipe - How to make Curry Chat

Ingredients


For Curry
4 1/2 cups buttermilk
200 gms besan (bengal gram flour)
2 to 3 green chillies , chopped
of ginger (adrak)
a pinch of freshly ground black pepper powder
salt to taste

For Chat
10 to 12 papadis
1/4 cup boiled sprouted moong (whole green gram)
1/4 cup sprouted and boiled matki (moth beans) (moath beans)
1/4 cup soaked and boiled kala chana (brown chick peas)

For Kofta
1/4 cup soaked chana dal (split bengal gram)
1/4 cup finely chopped spinach (palak)
1 tsp chilli powder
1 tsp coriander (dhania) powder
salt to taste
a pinch asafoetida (hing)
1 tsp oil
shredded cabbage
shredded capsicum
finely chopped coriander (dhania) for decoration

Method
For curry

  1. Add all ingredients and put it on steam for 30 mins.

For chat

  1. Crush the papdi into small pieces
  2. Make a tadka of moth,moong,black and green channa. Add masala to it put 4-5 drops of lemon and gram masala

For kofta

    For kofta
  1. Grind dal and mix palak add masala and then fry

  1. Take a bowl and put papdi.
  2. Then put the chat and cut the koftas into two pieces
  3. Then put it on the chat and the put the curry.
  4. Decorate with cabbage,carrot,capsicum and coriander.

This was delicious - at least, the way I interpreted the recipe was delicious. It makes enough curry sauce that we could have used twice the chat and four times the kofta (which we couldn't get to keep its shape in the oil, so we just fried the mixture into little crunchies). And it was good enough that we're sprouting more beans just to use up the rest of the sauce.
