Ingredients


For Dudhi Soup
2 cups peeled and roughly chopped bottle gourd (doodhi / lauki)
1/2 cup finely chopped mixed vegetables
freshly ground black pepper (kalimirch) powder to taste
1/8 tsp salt or as advised by doctor / dietitian
1 tbsp lemon juice

For The Garnish
1 tbsp finely chopped coriander (dhania)

Method

  1. To make {span class="bold1"}dudhi soup{/span}, combine chopped bottle gourd along with 1 cup water in a pressure cooker and pressure cook on a medium flame for 2 whistles.
  2. Allow the steam to escape and then open the lid, cool the mixture and blend till smooth. Do not strain it.
  3. Transfer the mixture to a broad pan and add the vegetables along with 1 cup water and pepper powder.
  4. Mix well and cook on a medium flame for 3 to 4 minutes or until the vegetables are completely cooked, while stirring occasionally.
  5. Remove from the flame, just before serving, pour equal quantities of the soup into 4 individual bowls.
  6. Add some salt and lemon juice and mix well.
  7. Serve {span class="bold1"}dudhi soup{/span} immediately garnished with coriander.
