Makes 5 servings
For The Idli
1 1/2 cups semolina (rava)
1 1/2 cups sour buttermilk
1/2 cup grated carrot
3 chopped green chillies
salt to taste
1/2 cup spinach (palak) puree
For Chaat
2 cups mixed sprouts
1/2 cup chopped spring onions
1/2 cup chopped tomatoes
1 1/2 tbsp chaat masala
salt to taste
2 tbsp grated processed cheese (optional)
1/2 cup roasted peanuts
1 tbsp chopped coriander (dhania)
few lemon slices

- For the idlis
- Combine all the ingredients in a bowl and mix well to make a smooth batter.
- Cover and keep aside for 20 minutes.
- Pour spoonful of the batter in each mould and steam in an idli steamer for 10 minutes.
- Cut the idlis into tiny pieces or mash them into crumbles and keep aside.
For the chaat

- Combine the sprouts, onions, tomatoes, chaat masala, salt, idli pieces and peanuts and toss well.
- Garnish with cheese, coriander and lemon slices and serve.
