To make eggless coconut cookies, in a deep bowl, add soft butter and beat it using an electric beater until it becomes light and fluffy. Add castor sugar and beat again for 2 minutes. Add desiccated coconut, plain flour and baking powder. Mix well using hands. Add milk and combine to form a dough. Divide the dough into 18 equal portions. Roll the cookies into a 50 mm. (2”) diameter circle and then roll in desiccated coconut. Line the baking tray using a parchment paper. Place 9 cookies on the baking tray, and keep 2 inch distance from one another. Bake at 160°C (320°F) for 15 minutes. Remove and cool completely. Repeat steps 8 to 10 to bake 1 more batch. Serve immediately or store in an air-tight container and use as required.
