Farfel with Baby Corn and Walnuts

Farfel is a variety of pasta that is shaped like a butterfly. It is usually served with a spicy tomato sauce. Here, you see an unusual combination of farfel tossed with baby corn, walnuts and a sprinkling of fresh basil and parsley.

Serves 4.
3 cups cooked farfalle (bow-shaped pasta)
1/4 cup finely chopped onions
2 tsp finely chopped garlic (lehsun)
1/4 cup finely chopped walnuts (akhrot)
1 cup sliced baby corn
2 tbsp finely chopped parsley
2 tbsp finely chopped fresh basil
a pinch of nutmeg (jaiphal)
4 tbsp olive oil or butter
salt and freshly ground black pepper (kalimirch) powder to taste
For serving
3 tbsp grated parmesan cheese or grated processed cheese
Method
- Main Procedure
- Heat the olive oil in a pan, add the onions and garlic and sauté till the onions turn translucent.
- Add the walnuts and baby corn and sauté for 3 to 4 minutes so the baby corn is cooked.
- Add the farfel, parsley, basil, nutmeg, salt and pepper and toss well.
- Serve hot garnished with cheese.
