Garlicky Potato Sandwich Bhajiya

These scrumptious bhajiyas are made in a unique way by batter-coating and frying potato slices sandwiched with garlic chutney. This gives you an ideal combination of crunch and finger-licking flavour in one handy snack.
Make sure you boil the potato slices with salt so that they don’t taste bland. Also make sure you slice the potatoes into an optimal thickness, neither too thin nor thick, so that they will cook well but not disintegrate. The Garlicky Potato Sandwich Bhajiya served with sweet chutney and a cup of hot chai is a perfect evening snack .

Makes 14 bhajiyas
28 boiled potato slices
14 tsp garlic chutney
To Be Mixed Into A Smooth Thick Batter (using Approx. 3/4 Cup Of Water)
1 1/4 cups besan (bengal gram flour)
1/4 tsp carom seeds (ajwain)
1/4 tsp turmeric powder (haldi)
1/2 tsp chilli powder
1/4 tsp asafoetida (hing)
a pinch of baking soda
salt to taste
For Serving

- Method
- Apply 1 tsp of garlic chutney on one slice of a potato and cover it with another potato slice to make 1 potato sandwich and keep aside.
- Repeat step 1 to make 13 more potato sandwiches.
- Heat the oil in a deep non-stick pan, dip each potato sandwich in the batter and deep-fry a few at a time, till they turn golden brown in colour from all the sides. Drain on an absorbent paper.
- Serve immediately with sweet chutney.
