  1. Combine the oil, mustard seeds, curry leaves and asafoetida in a microwave safe bowl and microwave on high for 1 1/2 minutes.
  2. Add the potatoes, onions and 1 cup of water, mix well and microwave on high for 6 minutes.
  3. Add the grated corn, sambhar powder, salt and 1 cup of water, mix well and microwave on high for 3 minutes.
  4. Add the tomatoes, mix well and microwave on high for 2 minutes
  5. Serve hot garnished with coriander.

Delicious recipe. The best part of this recipe is, it gets ready very quickly in a microwave. Made using very basic ingredients, this curry tastes really nice.
