Makes 20 cocktail vadas
1 cup kala chana (brown chick peas) , soaked for 8 hours
2 to 3 chopped red chillies
1 tsp chopped ginger (adrak)
2 tbsp rice flour (chawal ka atta)
1 tbsp garam masala
2 cloves (laung / lavang)
1 tsp cumin seeds (jeera)
1 tsp coriander (dhania) seeds
2 tsp lemon juice
2 tbsp oil
salt to taste
2 tbsp chopped coriander (dhania)
oil for deep frying
Method
- Method
- Combine all the ingredients except the coriander and salt and grind in to coarse paste using little water.
- In a bowl add the grounded smooth paste, coriander and salt, mix well.
- Heat the oil in kadhai, gently drop heaped teaspoons of the mixture into the oil.
- Fry until it turns golden brown from both the sides.
- Repeat the same process to make more vadas.
- Allow it to cool for a while to turn then crispy.
- Serve with sauce or chutney of your choice.
