Here is a quick and tasty Jhatpat Vegetable Rice which can be prepared in jiffy for sudden guests. Simply stir fry the veggies and cook them with rice and seasoning powders.
Jhat Pat Vegetable Rice recipe - How to make Jhat Pat Vegetable Rice

2 cups long grained rice (basmati) , washed and soaked for 1/2 hour
4 cups hot water
2 medium sized onions, chopped
1 large sized tomato, deseeded and chopped
2 medium sized capsicums, chopped
1/4 cup carrot cubes
1/4 cup green peas
1/4 cup chopped french beans
10 " sized cauliflower florets
2 green chillies, finely chopped
1 tsp ginger (adrak) paste
6 peppercorns
4 sticks of cinnamon (dalchini)
1/2 tsp turmeric powder (haldi)
2 bayleaves (tejpatta)
2 tbsp biryani masala powder or garam masala
2 tbsp oil or ghee or butter
salt to taste
Method
- In a kadai, heat ghee,add pepper,bay leaves,cinamon & oninons & let it cook for 1 min add ginger paste & finely chopped chillies.
- Then add capsicum,add carrot, beans, cauliflower, peas & salt as per taste.
- Then add tomatoes, let it cook for seconds & add biryani masala & turmeric powder.
- Cook for 2 mins.
- Add soaked rice & hot water as required to cook rice, bring to boil, slow down the flame & close with lid & cook for 15 mins.
- Take care that rice is not over cooked & doent stick to the bottom of karahi.
- Serve with dahi/ kadhi/gravy.
