This can be made in a jiffy as it does not consume much time. Jowar noodles made fresh in a stemer and mixed with veggies and a tempering of mustard seeds. A healthy Indian version of noodles.

Ingredients


For The Noodles
2 cups jowar (white millet) flour
salt to taste
1 tsp oil
warm water for binding the dough

Other Ingredients
2 tbsp shredded cabbage
2 tbsp grated carrot
2 tbsp thin sliced capsicum
salt to taste
1 tsp oil
1 tsp mustard seeds ( rai / sarson)
1/4 tsp asafoetida (hing)
1/4 tsp turmeric powder
2 tsp noodles masala
1 tsp lemon juice
chopped coriander (dhania) for garnishing

  1. Mix all the ingredients and to a stiff dough using warm water.
  2. Grease sev press with oil and put the dough in it and make sev on a plate.
  3. Steam the sev for 5-7 minutes. It can be made in idli plates also.
  4. Allow to cool, then break to smaller pieces.

How to proceed

  1. Heat 1 tsp oil in a pan and add the mustard seeds.
  2. When the seeds crackle add asafoetida, turmeric, cabbage, carrots and capsicum and sprinkle some water and cook for few minutes.
  3. Add salt, noodles masala and mix well.
  4. Add the steamed noodles and lemon juice. Mix gently.
  5. Garnish with chopped coriander and serve hot.
