Makes 3 servings
1 tbsp oil
1/2 tsp cumin seeds (jeera)
1/2 tsp fenugreek (methi) seeds
1/2 tsp fennel seeds (saunf)
1/2 tsp carom seeds (ajwain)
2 tsp ginger-garlic (adrak-lehsun) paste
2 onions , sliced
1/2 cup chopped raw mango
2 big sized carrot , cut into cubes
8 to 10 curry leaves (kadi patta)
2 tomatoes , chopped
1/4 tsp turmeric powder (haldi)
1 tsp chilli powder
1 tsp garam masala
1 tsp coriander (dhania) powder
salt to taste

- Method
- Heat the oil in a kadhai and add jeera, methi seeds, saunf and carom seeds.
- When the seeds crackle, add the onions and ginger-garlic paste and saute till the onions turn golden brown in colour.
- Add the coriander powder and cook for one more minute.
- Add the tomatoes and saute till the tomatoes becomes soft.
- Add the raw mangoes and carrots, mix well and add the turmeric powder, red chilli powder and salt and mix well.
- Sprinkle some water and cook on a medium flame for 8 to 10 minutes.
- Add the garam masala and curry leaves.
- Cook for another one minute.
- Serve with chapattis.
