Khatkhatem is an amazing vegetable curry recipe laden with rich taste, flavours and great looks. The vegetables are simmered in a gravy prepared from ground peanuts, coconut, red chillies and tamarind. A spicy and sour vegetable preparation to be enjoyed with steamed rice.

Makes 6 to 8 servings
To Be Combined and Grounded Into A Smooth Paste
3/4 cup freshly grated coconut
1/2 tsp turmeric powder (haldi)
4 whole dry kashmiri red chillies
1 tbsp tamarind (imli) pulp
Other Ingredients
1 cup chopped carrots , cooked
1 cup chopped pumpkin , cooked
1 cup chopped potatoes , cooked
1 cup chopped sweet potatoes , cooked
1 cup chopped drumsticks , cooked
1 cup chopped french beans , cooked
1 cup chopped white radish (mooli) , cooked
1 cup chopped ladies finger (bhindi) , cooked
2 tsp toovar (arhar) dal , cooked
3 tsp groundnuts , boiled
3 tsp sugar
salt to taste

- Method
- In a deep non-stick pan, combine the dal, groundnuts and vegetables and mix well.
- Add the prepared paste, salt and sugar and mix well.
- Boil for 3 minutes and then simmer for 10-15 minutes.
- Serve hot with rotis or rice.
