Khombi tarkari is a delicious and easy vegetable recipe with chopped mushrooms or khumbi cooked with stir fried onions, tomatoes, ginger, garlic, spice powders and then served hot garnished with coriander leaves. Enjoy with chapattis or parathas as main course or packed lunch.

oil
1 tsp cumin seeds (jeera)
2 onions , chopped
1 tbsp chopped ginger (adrak)
2 pieces garlic (lehsun), chopped
2 green chillies, chopped
1 tsp turmeric powder (haldi)
100 gms sliced mushrooms (khumbh)
1 tsp salt
chopped coriander (dhania)
lemon juice to taste
Method
- Fry jeera in hot oil. add the chopped onions, ginger, garlic, chillies and haldi. fry until light brown, golden colour. add the sliced mushrooms and salt. fry for about 15 minutes on low - medium heat. add the fresh coriander and about 1 tbs lemon juice. serve with rice & roti.
