Lauki Moong Dal Curry

The simple Lauki cooked with roasted split moong dal and fried vadis. This is a side dish and can be had both with chapattis or rice.

Makes 4 serving
1 bottle gourd (doodhi / lauki) , peeled and sliced
1/2 cup moong (whole green gram) dal
2 tbsp mustard (rai / sarson) oil
1 tsp cumin seeds (jeera)
8-10 urad dal (split black lentils) vadis
2 slit green chillies
salt to taste
1/2 tsp turmeric powder (haldi)
1 tsp coriander-cumin seeds (dhania-jeera) powder
1 tbsp ghee
3 tbsp chopped coriander (dhania)
Method
- Method
- Dry roast the moong dal till light brown. Keep aside.
- Heat oil in a non-stick pan and fry the vadis till golden brown. Keep aside.
- Temper the same oil with the cummin seeds.
- Add the sliced Lauki, green chillies, salt, turmeric powder, fried vadis and the coriander-cumin powder.
- Mix well and cook, covered on low flame till done.
- Serve, garnished with ghee and coriander leaves.
