Layered tikki chole bake is a superb baked dish recipe with chickpeas layered with vegetables and served hot sprinkled with melted cheese and chopped coriander leaves.

Ingredients


For The Potato Layer
8 potatoes , boiled , peeled and cubed
1/2 tsp cumin seeds (jeera)
2 onions , chopped
2 tbsp plain flour (maida)
1 tbsp chopped coriander (dhania) leaves
2 to 3 green chillies , chopped
1/2 tsp garam masala powder
salt to taste

For The Chole Layer
1 cup kabuli chana (white chick peas)
1 tsp cumin seeds (jeera)
3 onions , chopped
1 tbsp ginger-garlic (adrak-lehsun) paste
1 tsp chilli powder
1 tsp powdered pomogranate seeds (anardana)
2 cups tomato puree
2 tsp chopped green chillies
2 tbsp chopped coriander (dhania) leaves
1 tbsp chopped mint leaves (phudina)
1 tsp garam masala powder
salt to taste

For The Garnish
2 tbsp butter
1/4 cup bread crumbs
1/4 cup meethi chutney
2 tbsp green chutney
1 onion , cut into rings
1 tomato , sliced
1 capsicum , sliced
1/4 cup chopped coriander (dhania) leaves

Method
For the potato layer

    For the potato layer
  1. Heat the oil in a pan and add the cumin seeds.
  2. When the seeds crackle, add the onions and saute till they golden brown.
  3. Add the potato and saute on a low flame for 5 minutes.
  4. Remove from the flame, cool and add the remaining ingredients and mix well. Keep aside.

For the chole layer

    For the chole layer
  1. Wash. Clean and soak the kabuli chana in enough water for 8 to 10 hours.
  2. Drain and pressure cook till cooked. Keep aside.
  3. Heat the oil in a pan and add the cumin seeds.
  4. When the seeds crackle, add the onions and saute till they turn golden brown.
  5. Add the ginger-garlic paste and saute for 1 minute.
  6. Add the masalas, except the garam masala and saute for a few seconds.
  7. Add the tomato puree and salt and saute till oil leaves the sides and floats on top.
  8. Add the cooked chole, green chillies, mint leaves and mix well and simmer for 10 minutes.

  1. Grease a baking dish and sprinkle half the breadcrumbs.
  2. Divide the potato mixture into 3 equal portions and divide the chole mixture into 2 equal portions.
  3. Spread a portion of potato over the breadcrumbs and spread a chole layer over the potato.
  4. Spread some meethi and green chutneys and repeat the layers, finishing with the potato layer.
  5. Top with the 2 chutneys and sprinkle the onions.
  6. Serve immediately.
