A sweet variation to a typical savoury rice recipe, meethe chawal have rice cooked with grated carrots and sugar and flavoured with cardamom, cloves and kewra essence.

Makes 4 servings
2 cups soaked rice
4 cups grated carrot
2 cups sugar
4 to 5 cardamoms
4 to 5 cloves (laung / lavang)
a few drops of vanilla essence
1/2 cup ghee
Method
- Method
- In a deep pan, add enough water and add the rice, mix well and cook till the rice is half cooked.
- Heat the ghee in a kadhai, add the cardamoms and cloves in it lightly.
- Add the sugar, carrots, and rice, mix well and cook on very low heat until the rice is cooked and water is dried.
- Serve hot.
