Makes 6 servings
To Be Ground Into A Masala (makes Approx. 1 Cup)
1 cup sprouted moong (whole green gram)
3/4 cup chopped coriander (dhania)
2 tsp chopped green chillies
2 tsp chopped ginger (adrak)
2 tsp chopped garlic (lehsun)
1 tbsp lemon juice
salt to taste
Other Ingredients
3/4 cup peeled potato cubes
3/4 cup brinjal (baingan / eggplant) cubes
1/2 cup bananas cubes
1 cup chopped surti papadi (fresh vaal)
1 cup peeled and chopped purple yam (kand)
2 tbsp oil
2 tsp carom seeds (ajwain)
1/4 tsp asafoetida (hing)
1 tsp turmeric powder (haldi)
1 tbsp chilli powder
1 tbsp sugar
salt to taste
For The Garnish
1/4 cup chopped coriander (dhania)
Method
- Main procedure
- Combine together the potatoes, brinjals, bananas, surti papdi, yam and the prepared masala, mix well and keep aside for 15 minutes.
- Heat the oil in a pressure cooker, add the carom seeds and asafoetida and sauté for a few seconds.
- Add the vegetable-masala mixture, turmeric powder, chilli powder, sugar, salt and 1 cup of water, mix well and pressure cook for 3 whistles.
- Allow the steam to escape before opening the lid.
- Serve hot garnished with coriander.
