Makes 3 servings
1 onion , finely chopped
2 garlic (lehsun) cloves , finely chopped
1 ginger (adrak)
1 tbsp ghee
1 tsp coriander-cumin seeds (dhania-jeera) powder
1/4 tsp chilli powder
1 tsp lemon juice
3/4 cup coconut milk
salt and freshly ground black pepper powder to taste
1 to 2 tbsp cooked rice
2 1/2 cups vegetable stock
Method
- Method
- Heat the ghee in a deep pan, add the onions, garlic, and ginger and saute till they turn soft.
- Add the spices and vegetable stock, mix well and simmer for 20 minutes.
- Add the lemon juice, coconut milk and salt, mix well and simmer for 5-10 minutes.
- Add the rice, mix well and serve hot.
