Muruku is a crispy rice flour and urad dal chakli.

Makes 3 to 4 servings
1/2 cup urad dal (split black lentils)
2 cups rice flour (chawal ka atta)
1 tsp cumin seeds (jeera)
1 tsp sesame seeds (til)
2 tbsp butter or ghee
1/2 tsp asafoetida (hing)
salt to taste
oil for deep fry

- Method
- In a heavy bottom pan, fry the urad dal till light brown and let it cool. Grind it into a fine powder.
- In a deep bowl combine all the ingredients including the grinded urad dal, add enough water and knead into a soft dough.
- Divide the batter into 2 equal portion and place one portion of the dough in the chakli press make chakalis.
- Repeat with the remaining dough.
- Heat the oil in a kadhai and deep-fry the chaklist till light brown in colour. Drain on absorbent paper.
- Store in an airtight container when cool.
