Mushroom Malaka Stir-Fry recipe - How to make Mushroom Malaka Stir-Fry

Makes 4 servings
4 whole dry red chillies, broken into pieces
2 tbsp oil
3/4 cup thinly sliced spring onions whites
1 1/2 tbsp finely chopped garlic (lehsun)
1/2 cup red and yellow coloured capsicum cubes
6 cups quatered mushrooms (khumb)
salt to taste
8 to 10 basil leaves
1 tbsp lemon juice
1/4 cup fresh cream
1/4 cup finely chopped spring onion greens
Method
- Main Procedure
- Roast the red chillies on a pan, add 2 tablespoons water and blend to a smooth paste in a mixer. Keep aside.
- Heat the oil in a wok on a high flame; add the spring onion whites, garlic and red and yellow capsicum and stir-fry for a couple of minutes.
- Add the prepared red chilli paste, mushrooms and salt and stir-fry till the mushrooms are almost done.
- Add the basil leaves, lemon juice, cream and spring onion greens and stir-fry for a couple of minutes.
- Serve immediately.
