Ingredients


2 cups sugar
1 cup besan (Bengal gram flour)
2 cups ghee
enough water to cover sugar

Method

  1. Grease a flat tray with a little ghee and keep it aside.
  2. Heat 1 cup of ghee and add besan flour, stir well and keep aside.
  3. Place sugar in a heavy bottomed pan or kadhai, with enough water to cover, and cook on medium heat to make a syrup of 1 wire consistency (when a drop of syrup is placed between your forefinger and thumb and stretched, you get one wire stretching out). keep it aside, warm.
  4. Heat second cup of ghee and keep aside.
  5. Add besan and ghee mixture (from step 2) to gently boiling syrup and mix well, stirring all the time to avoid lumps from forming.
  6. Add 1 tbs. ghee at a time, from the heated 2nd cup of ghee, to this boiling flour and syrup mix, stirring all the time. continue until all the ghee is added.
  7. Keep stirring until ghee separates. the mixture will become bubbly/frothy and will begin to come off the pan and the spoon.
  8. Pour quickly on the greased tray and shake the tray to distribute it evenly.
  9. After 5-10 minutes, when it has set, cut into squares of the size you prefer.
  10. Blot off ghee on kitchen paper, allow to cool fully and store in an air tight box.
