Preparation Time:    Cooking Time:    Total Time:    Makes 4 servings

Ingredients

1 1/2 cups chopped tomatoes
1 1/2 cups chopped and boiled mixed vegetables (french beans , carrots and green peas)
1/2 cup boiled sweet corn kernels (makai ke dane)
2 tbsp ghee
1/4 cup milk
1 tsp sugar
1/4 cup fresh cream
salt to taste

To Be Ground Into A Smooth Paste (using 5 Tbsp Of Water)
1 cup sliced onions
2 tbsp cashewnuts (kaju)
1 tbsp almonds (badam)
1 tbsp coriander (dhania) seeds
1 tbsp cumin seeds (jeera)
1 tbsp poppy seeds (khus-khus)
2 tsp fennel seeds (saunf)
2 tbsp grated fresh coconut
1 tbsp roughly chopped green chillies
3 whole dry kashmiri red chillies , broken into pieces
1 cardamom (elaichi)
2 cloves (laung / lavang)
25 mm (1") piece cinnamon (dalchini)
7 curry leaves (kadi patta)

Method
    Method
  1. Combine the tomatoes and 1½ cups of water in a deep non-stick pan, mix well and cook on a medium flame for 8 to 10 minutes, while stirring occasionally. Allow the mixture to cool completely,
  2. Once cooled, blend in a mixer to a smooth mixture and keep aside.
  3. Heat the ghee in a non-stick kadhai, add the prepared paste and cook on a medium flame for 2 minutes, while stirring occasionally.
  4. Add the milk and tomato mixture, mix well and cook on a medium flame for 1 minute, while stirring occasionally.
  5. Add the mixed vegetables, sweet corn, sugar, fresh cream and salt, mix well and cook on a medium flame for another 3 to 4 minutes, while stirring occasionally.
  6. Serve hot.
