Instead of eating noodles with veggies, you can try the noodles in pakora style.
Noodles Pakoda recipe - How to make Noodles Pakoda

Makes 2 to 3 servings
1 cup besan (bengal gram flour)
2 tbsp cornflour
2 mushrooms (khumbh) , finely chopped
1 cup boiled noodles
1/2 cup finely chopped cabbage
2 chopped green chillies
1 tsp chopped ginger (adrak)
2 tbsp finely chopped coriander (dhania)
salt to taste
1/4 tsp chilli powder
oil for deep frying

- Method
- Combine the besan and cornfour in a bowl, add enough water and mix well till no lumps remain and the batter is of thin consistency.
- Whisk the batter for 4-5 minutes so that it becomes softer. Add salt, chilli powder, green chillies, ginger, mushrooms, cabbage and noodles in the mixture and mix all ingredients well.
- /heat the oil in a pan, drop some mixture and deep fry till they turn golden brown and crisp form both the sides.
- Serve noodles pakora’s with tomato sauce or green chutney.
