Two mild vegetables come to gather to create fiber rich, healthy, light and simple raita.
Palak and Doodhi Raita recipe - How to make Palak and Doodhi Raita

Makes 5 to 6 servings
1/4 cup blanched and finely chopped spinach (palak)
1/4 cup grated bottle gourd (doodhi / lauki)
1/4 cup boiled white chick peas
2 tbsp pomegranate (anar) seeds
2 cups beaten curds (dahi)
salt to taste
2 pinches nutmeg (jaiphal) powder
For Garnish
roasted cumin seeds (jeera) powder
1/4 cup roasted and crushed peanuts
Method
- Method
- Combine all the ingredients in a bowl and mix well.
- Serve fresh as is or after refrigerating it for an hour.
- Before serving garnish it with cumin seeds powder and peanuts.
- Serve it with khakra.
