Ingredients


8 ladi pavs
butter to shallow fry

For Bhaji:
1 capsicum, finely chopped
2 onions, finely chopped
2 tomatoes, finely chopped
2 1/2 cups chopped mixed vegetables
1/2 cup green peas
2 tbsp butter
2 tsp pav bhaji masala
1 1/2 tsp chilli powder
1/4 tsp turmeric powder (haldi)
salt to taste
1 cup water (in which vegetables were boiled)
1/2 tsp grated ginger (adrak)
1/2 tbsp lemon juice

Garnish with:
1 tbsp chopped coriander (dhania)
1 onion, chopped
lemon wedges

Method

    Method
  1. Pressure cook mixed vegetables and peas till well done.
  2. Mash them coarsely after draining.
  3. Heat butter in a pan. add ginger-garlic, capsicum, onion, tomatoes.
  4. Cook till very soft.
  5. Add pavbhaji masala, chili powder, turmeric, salt, and cook again for 5 minutes. bring it to boil.
  6. Simmer till it becomes thick, keep on stirring and mashing pieces in between. add lemon juice, stir.
  7. Garnish with chopped coriander and a block of butter.
  8. For the pavs slit them horizontally leaving one edge attached.
  9. Apply butter and roast open on a tava( griddle) till hot and soft with the surface crisp on both sides.
