Lauki ki subzi (peethewali) is a traditional indian vegetable recipe with lauki or bottle gourd chopped and cooked in a delectable indian style of cocking with select masala powders. Enjoy with poories or roti.

Makes 4 servings
1/2 cup rice (chawal)
2 tbsp oil
1 sized bottle gourd (doodhi / lauki) , peeled and chopped
2 tsp chopped garlic (lehsun)
1 slit green chilli , chopped
1/4 tbsp turmeric powder (haldi)
1/4 tbsp garam masala powder
1/4 tbsp cumin seeds (jeera)

- Method
- Clean, wash and soak the rice in enough water for about 5-7 minutes. Keep aside.
- Heat the oil in a pan, add the bottle gourd and cook for 5 to 7 minutes.
- Meanwhile, combine the rice, garlic, green chillies, cumin seeds, garam masala and blend in a mixer into a smooth paste.
- Add the salt and the grounded paste to the cooked bottle gourd, mix well and cook for around 10 minutes.
- Serve hot.
