Plum Parfait, Plum Stew with Vanilla Ice-cream

This tangy and tasty Plum Parfait features plums cooked with sugar and cinnamon, chilled and served with a topping of vanilla ice-cream.
The tangy notes of plums, the spicy magic of cinnamon and the sweet lusciousness of vanilla ice-cream altogether create a heavenly experience, which will stay in your memory for a long time.

Makes 8 to 10 servings
1 cup deseeded and sliced plums
3 tbsp sugar
2 small sticks cinnamon (dalchini)
2 tsp cornflour
For Serving
8 scoops vanilla ice-cream
- Method
- Combine all the ingredients in a saucepan along with ¾ cup of water, mix well and cook on a medium flame for 6 to 8 minutes, while stirring occasionally.
- Cool completely and refrigerate for 30 minutes.
- Just before serving, pour the plum mixture into 8 individual small glasses topped it with one scoop of vanilla ice-cream in each glass.
- Serve immediately.
