Here is a mouth-watering Lebanese salad with the dominant flavour of parsley! You will find this Potato Salad quite different from the traditional salads you might have tried so far, as it uses an off-beat combination of ingredients like cooked potatoes, chopped onions, garlic and herbs, perked up with lemon juice.

Makes 4 servings
2 cups boiled potato cubes
1/2 cup finely chopped onions
1/4 cup chopped parsley
2 tbsp finely chopped mint leaves (phudina)
freshly ground black pepper (kalimirch) to taste
1 tbsp finely chopped garlic (lehsun)
2 tbsp lemon juice
2 tbsp olive oil
salt to taste
- Method
- Combine all the ingredients in a deep bowl and toss well.
- Refrigerate for atleast 1 hour.
- Serve chilled.
Potatoes are a cooking saviour..This was a salad i made as a side for lunchand kids loved it..The addition of parsley and mint give it a very herby flavour and garlic takes the taste to another level itself..Must try and make if anyone wants to make a quick no fuss salad..
the fusion of salt and lemon in the potatoes is very tasty. the potatoes in the dish balances the sour taste of the lemon juice and also the parsley and the mint leaves adds to the colour and also the taste.
