For Haricot Bean Salad
1 1/2 cups soaked and boiled haricot beans
1/2 cup sliced yellow capsicum
1/2 cup sliced red capsicum
1/2 cup sliced zucchini
For The Dressing
2 tsp extra virgin olive oil
2 tsp lemon juice
1 tsp finely chopped garlic (lehsun)
1/2 tsp mustard (rai / sarson) powder
1/2 tsp dried mixed herbs
1/2 tsp dry red chilli flakes (paprika)
1/2 tsp sea salt (khada namak)
freshly ground black pepper (kalimirch) to taste

- Combine all the ingredients in a bowl and mix well. Keep aside.

Wash and soak 1/2 cup haricot beans in enough water. This will make 1 1/2 cups cooked white beans.

Cover and soak overnight.

Put the soaked and drained haricot beans in a pressure cooker and cover with enough water.

Add 1/4th tsp salt.

Pressure cook for 3 whistles.
