Makes 4 serving
1 cup soaked and cooked rice (chawal)
2 tbsp oil
1/2 tsp cumin seeds (jeera)
1 tbsp peanuts
a pinch of asafoetida (hing)
2-3 dry red chillies (pandi)
1 cup boiled mixed sprouts
1-2 bayleaf (tejpatta)
1 tbsp sugar
1 tbsp lemon juice
10 curry leaves (kadi patta)
1/4 cup finely chopped pineapple
1/4 cup pomegranate (anar)
1/4 cup finely chopped apples
1/4 cup chopped coriander (dhania)
1/4 cup finely chopped coconut
1/2 tbsp garam masala
salt to taste

- Method
- Heat oil in a broad non- stick pan, add the cumin seeds.
- When the seeds crackle add asafoetida, peanuts, bay leaves, chillies and sprouts, mix well.
- Add salt, garam masala, sugar and lemon juice, mix well. Add the rice and mix again.
- Now add the apples, pineapple, pomegranate, coconut, coriander and curry leaves, stir to mix.
- Serve hot.
