This is a good breakfast dish and can be served with curds or pickle.
Pudina Parathas recipe - How to make Pudina Parathas

Makes 4 parathas
2 cups whole wheat flour (gehun ka atta)
1/2 cup finely chopped mint leaves (phudina)
1 onion , chopped
3 to 4 green chillies , chopped
1/2 raw mango , chopped
1 tbsp chopped coriander (dhania)
1/2 tsp cumin seeds (jeera)
1/2 tsp garam masala
salt to taste
a pinch of carom seeds (ajwain)
ghee or oil for cooking

- Method
- In a bowl, add enough water to the wheat flour and knead to a smooth dough. Keep aside for 15-20 minutes.
- Divide the dough into 4 equal portions and keep aside.
- Combine the remaining ingredients in another bowl and mix well.
- Divide the mixture into 4 equal portions and keep aside.
- Roll out a portion of the dough into a circle of 4” diameter.
- Place a portion of the stuffing at the centre and bring the edges together at the centre to seal tightly.
- Roll out again into a circle of 6” diameter, using little whole wheat flour.
- Heat a tava and cook each paratha, using little oil, till golden brown spots appear on both the sides.
- Repeat the same steps to make 3 more parathas.
- Serve hot with chutney or tea.
