A tasty and quick potato sabzi made with potatoes cooked in various spices. Serve with puris or rotis.

4 big sized boiled potatoes
3 onions, chopped lengthwise
4 green chillies, slit
2 cups water
1 tsp turmeric powder (haldi)
3 tsp oil
1/2 tsp urad dal (split black lentils)
1/2 tsp mustard seeds ( rai / sarson)
5 to 6 curry leaves (kadi patta)
chopped coriander (dhania) leaves
salt to taste
Method
- Heat oil in a kadai
- Add mustard seeds,urad dal and curryleaves fry till mustard seeds crackle
- Add onions and saute until golden brown
- Now add salt,water and turmeric powder
- When water starts boiling add semi mashed aloo and cook for 2 mins
- Garnish with coriander leaves and serve
