A delectable stuffed paratha recipe, raddish paratha has grated radish and select seasonings like salt, chillies and dried methi leaves as filling. The hot and soft radish or mooli paratha is sure to melt in your mouth when served with fresh curd and mango pickle.

Ingredients


For The Dough
1 1/2 cups plain flour (maida)
1 cup whole wheat flour (gehun ka atta)
1 tsp ghee
salt to taste

For The Stuffing
4 radish (mooli) , grated
chilli powder to taste
salt to taste
2 tsp garam masala
2 tsp ginger-garlic (adrak-lehsun) paste

Other Ingredients
whole wheat flour (gehun ka atta) for rolling
oil for cooking

Method
For the dough

    For the dough
  1. Combine all the ingredients in a bowl, mix well and knead into a soft dough, using enough water.
  2. Divide the dough into 3 equal portions and keep aside.

For the stuffing

  1. Sprinkle little salt on radish and keep aside for 15 minutes.
  2. Squeeze the excess water and add the remaining ingredients and mix well.
  3. Divide the stuffing into 3 equal portions and keep aside.

  1. Roll out a portion of the dough into a circle of 4” diameter.
  2. Place a portion of the stuffing at the centre and bring the edges together at the centre to seal tightly.
  3. Roll out again into a circle of 6” diameter, using little whole wheat flour for rolling.
  4. Heat a tava and cook each paratha, using little oil, till golden brown spots appear on both the sides.
  5. Repeat the same steps to make 2 more parathas.
  6. Serve hot with chutney or tea.
