Quinoa Salad with Pomegranate Dressing recipe - How to make Quinoa Salad with Pomegranate Dressing

Makes 4 serving
1 cup cooked quinoa
2 cups chopped parsely
2 cups chopped mint leaves (phudina)
2 large handfuls of baby spinach (palak)
1 finely sliced onion or 2 finely sliced shallots (madras onions)
2 chopped cucumbers
2 tomatoes , chopped or 250 gms cherry tomatoes
20 gms pumpkin seeds
20 gms chopped almonds (badam) or pistachios
20 gms berries
For The Pomegranate Dressing
3 tbsp pomegranate (anar) molasses
1 tbsp lemon juice
1 tbsp lemon zest
2 tsp honey
50 ml cold pressed olive oil
fresh ground pepper to taste
Method
- Method
- Combine all the dressing ingredients until creamy. Taste and check it should be lovely.
- Mixtogether parsley, mint, spring onion and spinach.
- Addthe tomato, cucumber, seeds, quinoa and almonds.
- Mixin a few tablespoons of the dressing.
- Spooninto a large serving bowl and enjoy.
- Haveextra dressing on the side in case you need more.
