Ratatouille is a traditional French stewed vegetable dish but here it is given with the Indian touch that can be served either with rotis or paranthas.

Makes 4 serving
1 cup chopped potatoes
1/2 cup chopped capsicum
1/2 cup chopped carrots
1/2 cup green peas
1/4 cup chopped turnip
1/4 cup chopped radish (mooli)
1/4 cup chopped tomatoes
1/4 cup chopped french beans
1/4 cup chopped cauliflower
1/4 cup chopped cabbage
1 tsp turmeric powder (haldi)
1 tsp dry red chilli flakes (paprika)
1/2 tsp chilli powder
a pinch asafoetida (hing)
salt to taste
1 tbsp olive oil
1/2 cup water

- Method
- Combine all the ingredients and place them in a microwave safe bowl and mix well.
- Cover it with a lid and cook high in microwave for 8-10 minutes
- Garnish with fresh coriander and serve hot.
