Makes 3 to 4 servings
For The Schezuan Sauce
1 cup oil
1/2 cup chopped ginger (adrak)
1/2 cup chopped garlic (lehsun)
1/2 tsp black peppercorns (kalimirch)
1/2 cup celery (ajmoda)
1/2 cup chopped spring onion greens
1/2 cup chopped spring onions whites
2 tsp salt
1/2 tsp m.s.g
1/2 tsp cochineal
1 tsp vinegar
2 tbsp chilli powder
1 recipe red chilli sauce
For The Red Chilli Sauce
7 to 8 whole dry kashmiri red chillies
1/4 cup roughly chopped garlic (lehsun)
1/2 tsp cumin seeds (jeera)
1/4 cup vinegar
1 1/2 tsp sugar
1 1/2 tsp salt
1/4 cup tomato sauce
Other Ingredients
1 cup schezuan sauce
500 gms paneer (cottage cheese) , cut into cubes
1 tsp cornflour
1/2 cup water
salt to taste
For The Garnish
1/4 cup chopped spring onion greens

How to proceed
For the red chilli sauce
- For the red chilli sauce
- Combine all the ingredients except the tomato sauce in a blender and blend to a smooth paste.
- Transfer the mixture into a bowl, add the tomato sauce and mix well. Keep aside.

- Heat the oil, add one by one all the ingredients and mix well.
- Cook on a slow flame for 5-7 minutes. Remove from the flame keep aside.

- Heat a pan add the prepared schezuan sauce and saute for 2 minutes.
- Add the paneer, salt if required cornflour mixed with 1/2 cup water, mix well and simmer till the water is completely dried up.
- Serve hot garnished with green onions.
