A quick and simple snack option—you just need to soak the semolina for 30 minutes, and you’re all set to make pancakes without the hassles of grinding. I’ve added cabbage, carrot etc. To the semolina pancakes. You can feel free to add other grated veggies too, if you wish.

Semolina Pancake recipe - How to make Semolina Pancake

Soaking time:  30 minutes.   Preparation Time:    Cooking Time:    Total Time:    Makes 24 mini pancakes

Ingredients

1 1/2 cups semolina (rava)
3/4 cup fresh curds (dahi)
1/2 cup finely chopped cabbage
1/2 cup grated carrot
1/4 cup finely chopped coriander (dhania)
1 tbsp finely chopped green chillies
salt to taste
2 tsp fruit salt
4 tsp oil

For Serving
coconut chutney

Method
    Method
  1. Combine the semolina, curds and 1 cup of water in a bowl, mix well and allow it to soak for 30 minutes.
  2. Add the cabbage, carrot, coriander, green chillies and salt and mix well.
  3. Just before making the pancakes, add the fruit salt and 2 tbsp of water to the batter.
  4. When the bubbles form, mix gently.
  5. Add 2 tsp of oil and mix gently.
  6. Grease a non-stick mini uttapa pan using a little oil.
  7. Pour approximately 1½ tbsp of batter in each uttapa mould and spread it lightly.
  8. Cook using a little oil, till they turn crisp and golden brown from both the sides.
  9. Repeat steps 7 and 8 to make the remaining pancakes in 3 more batches.
  10. Serve immediately with coconut chutney.

      Can I make these pancakes without the uttapa mould as I don’t have one. If yes, how?

         Yes you can make these pancakes on a dosa tava. You can choose the size of the pancake too then.

      wow!! this is the most easiest and delicious breakfast for me. in no time it is ready, and keeps me full for long.

      These pancakes are very easy and quick to make, I make this often for breakfast and serve with green chutney or coconut chutney
