Spinach and Carrot Rice recipe - How to make Spinach and Carrot Rice

2 cups steamed rice
1/2 tsp cumin seeds (jeera)
2 onions, sliced
2 large cloves garlic (lehsun), chopped
2/3 cup grated carrots
2 cups chopped spinach (palak)
1 vegetarian seasoning cube
2 tbsp butter
salt and black pepper (kalimirch) powder to taste
Method
- Heat the butter and add the cumin seeds.
- When they crackle, and the onions and garlic and saute for 2 minutes.
- Add the carrots and spinach and saute for another minute.
- Add the rice, seasoning cube, salt, pepper and 1/4 cup of water and mix well.
- Cook on a slow flame for 5 to 7 minutes till the moisture evaporates.
- Serve hot.
