Preparation Time: 25 mts Cooking Time: 15 mts Total Time:
1/4 kg small brinjals (baingan / eggplant)
2 tbsp oil
for grinded mixture
1 tsp fennel seeds (saunf)
1/2 cup peanuts
2 tomatoes
5 flakes of garlic (lehsun)
2 onions, finely chopped
1 tsp turmeric powder (haldi)
1 1/2 tsp chilli powder
2 to 3 pcs of coconut
1 1/2 tsp salt
Method
- First pour oil in pan heat.
- Then keep stove in sim put small brinjals and fry deeply then add 1/2 of finely choped onion and stir brinjal, onion so it doesnt turn brown.
- Later on in a mixier grinder grind saunf, rawpeanuts,coconut, turmeric powder,red chilli powder,tomatoes, remaining onions and salt.
- Then add to brinjal then this mixture with brinjal should boil till raw smell goes and till oil separates.
- Later on garnish this with coriander leaves and serve this with rice or chapathis.
