2 kgs tomato juice (2.5kgripe fresh red tomatoes hybrid variety)
150 gms sugar
25 gms salt (1tsp=3gm)
3 to 4 cups vinegar or 2tsp\3\4tbsp for 1kg glacial acetic acid
1/3 tsp for 1 kg sodium benzoit
40 gms 2 medium sized onions
2 gms (1 full pod) garlic (lehsun)
1 " piece of ginger (adrak)
1 1/2 to 2 gms cardamom (elaichi) powder
1 1/2 gms cinnamon (dalchini) powder
1 1/2 gms cloves (laung / lavang)
2 gms black peppercorns (kalimirch)
2 gms chilli powder
2 gms cumin seeds (jeera)
Method
- Select red fleshy tomatotrim out stemcavity yellow or greenish partif any
- Cut the fruit churn in mixy heat with salt
- Extract the juice with sieve,discard peal & seeds
- Measure juice ,calculate all ingredients proptionately ,if juice is less or more
- Grinde all ingredients masalas\spices only fine grinding is essential
- Take spices in loosely tied muslin bag hang in juice ,or dip it
- Boil the juice with spice bag till consistency remains 1\3 of original
- Squeese spice bag juice should come out ,add sugar salt
- Add vinegar or acetic acid and preservative disolved in hot water
- Bottele hot sauce in boiling hot bottels ,keep 1 1\2"vacant in bottel.
- Sauce is ready when cool store in cool and dry place .
