Veg and Fruit Fritters with Spicy Dip

The combination of fruits and veggies causes a burst of flavour in your mouth, and exposes your palate to a mind-boggling range of textures. A dash of pepper is added to the batter to give the Assorted Veggies and Fruit Fritters a peppy flavour.

Makes 3 servings
1/2 cup cauliflower florets
1/2 cup capsicum cubes
1/2 cup boiled baby potatoes halves
1/2 cup pineapple cubes
1/2 cup apple cubes
oil for deep-frying
To Be Mixed Into A Batter (using 3/4 Cup Of Water)
1/2 cup cornflour
3/4 cup plain flour (maida)
1/2 tsp baking powder
1/4 tsp freshly ground black pepper (kalimirch)
salt to taste
To Be Mixed Into Spicy Dip Sauce
1/2 cup mayonnaise
2 tsp chilli sauce
1 tsp mustard (rai/ sarson) sauce
1 tbsp curds (dahi)
1/2 tsp finely chopped garlic (lehsun)
2 tbsp finely chopped spring onion greens
a pinch of salt
- Method
- Heat the oil in a deep non-stick pan, dip each piece of veggies and fruits into the batter and deep-fry in hot oil, a few at a time, till they turn golden brown in colour from all the sides. Drain on an absorbent paper.
- Serve immediately with spicy dip sauce.
