This vegetable pulao is a Quick Recipe and easy to make, but very tasty, with the added flavours of ginger, green chillies and garam masala. Prepare vegetable pulao as close to serving time as possible so that the flavours are fresh and strong.i

Ingredients


For The Vegetable Pulao
1 cup long grain rice (basmati)
1 cup chopped mixed vegetables ( french beans , carrot and green peas)
1 tbsp oil
1/2 cup thinly sliced onions
1 bayleaf (tejpatta)
25 mm cinnamon (dalchini) stick
2 cloves (laung / lavang)
1/2 tsp finely chopped green chillies
1/2 tsp grated ginger (adrak)
1 tsp garam masala

For The Garnish (optional)
1 tbsp finely chopped coriander (dhania)

For Serving With The Vegetable Pulao
curd (dahi)
roasted papad

Method

  1. To make {span class="bold1"}vegetable pulao{/span}, soak the rice in enough water for 30 minutes, drain well and keep aside.
  2. Heat the oil in a pressure cooker, add the onions, bayleaf, cinnamon and cloves and sauté on a medium flame for 1 minute.
  3. Add the soaked rice and mixed vegetables, mix well and cook on a medium flame for 1 minute, while stirring continuously.
  4. Add the green chillies, ginger, garam masala, 2½ cups of hot water and salt, mix well and pressure cook for 2 whistles.
  5. Allow the steam to escape before opening the lid.
  6. Serve the {span class="bold1"}vegetable pulao{/span} hot garnished with coriander.

How to soak basmati rice for pulao

  2. Soak 1 cup of rice in enough water for 30 minutes.
  3. After an hour, drain well with the help of a strainer.

  2. Now we will add the Khada masalas. Khada Masala is a Hindi term for whole spices. In this recipe we have used bayleaf.
  3. Also, we will add the cinnamon and cloves. Sauté on a medium flame for 30 seconds till they start crackling.
  4. Add the onions and sauté on a medium flame for 1 minute.
  5. Add the chopped green chilli.
  6. Add the grated ginger. Alternatively, you can even use ginger-green chilli paste.
  7. Sauté on a medium flame for one minute or till the raw smell goes away.
  8. Add the chopped French beans and carrots. You can use any vegetables of your choice for the Vegetable Pulao. Use more seasonal vegetables as the fresh vegetables are loaded with nutrition.
  9. Now, add the green peas.
  10. Add the garam masala and salt to taste.
  11. Add the drained rice, mix gently and cook on a medium flame for 1 minute, while stirring continuously.
  12. Add 2 cups of hot water and mix well. Taste the water for salt and spices.
  13. Cook on a medium flame for 2 whistles. Allow the steam to escape before opening the lid.

  15. Serve the vegetable pulao hot with curds and papad as accompaniments.

Easy way to make vegetable pulao.. really an instant way.. this pulao was simply aromatic and with loads of flavour to it.. Served this with mint raita.. and roasted papad.. everybody loved this pulao.. and they want this every week to be made atleast once..
