Xotic Mutter Bites recipe - How to make Xotic Mutter Bites

Makes 1 serving
For The Stuffing
1 tbsp butter
1 tbsp oil
1 tsp cumin seeds (jeera)
1 tsp ginger (adrak) paste
1 tbsp chopped grene chillies
1 tsp garlic (lehsun) paste
1/2 cup chopped onions
2 tbsp soaked melon seeds (charmagaz)
1 cup boiled and crushed green peas
1/2 boiled and mashed potato
1/2 cup chopped corainder
salt to taste
1/2 tsp turmeric powder (haldi)
2 tsp garam masala
2 tbsp tomato ketchup
2 tbsp grated paneer (cottage cheese)
2 tbsp chopped cashewnuts (kaju)
1 grated processed cheese cube
For The Dough
100 gms plain flour (maida)
1 tbsp ghee
salt to taste
1/2 tsp garlic (lehsun) paste
water to bind the dough
Other Ingredients
oil for deep frying
plain flour (maida) for rolling

- For the stuffing:
- Heat butter and oil and add the cumin seeds and allow to crackle.
- Add the ginger, garlic, green chilly, onion and saute till onion turns pink.
- Add melon seeds paste, peas ,potato, coriander and mix well.
- Add salt, haldi, garam masala, ketchup, paneer, cashewnuts and saute till it leaves the vessel.
- Remove from the flame and add grated cheese and mix well and keep aside.

- Mix all the ingredients and add water to make a medium soft dough.
How to proceed
- How to proceed
- Make small balls of this dough and roll to a puri of medium thickness of 3 inches diameter.
- Place 1-1 1/2 tbsp of the stuffing and cover with another puri of the same size.
- Seal the edges of the puri using a fork so that the stuffing doesn't come out.
- Deep fry these 'exotic mutter bites' in hot oil till golden on a medium flame.Serve hot with green chutney.
