1 cup uncooked rice (chawal)
1 tbsp oil
1 large onion , chopped
1 large capsicum , chopped
1 large red capsicum , chopped
2 cloves of garlic (lehsun) , chopped
1 (7 ounce) can chopped jalapeno peppers
1 cup Salsa
3 tbsp chilli powder
2 tbsp cumin seeds (jeera) powder
1 tbsp dried oregano
2 cups paneer (cottage cheese)
1 (8.75 ounce) can of canned corn kernels (makai ke dane) , drained
1 (15.25 ounce) can of green chillies
2 cups coarsely crushed corn chips
1/2 cup grated cheddar cheese

- In a saucepan bring 2 cups water to a boil. add rice and stir. reduce heat, cover and simmer for 20 minutes.
- Meanwhile, heat oil in a large skillet over medium heat. saute onion, green bell pepper, red bell pepper and garlic. in a medium bowl combine chile peppers, salsa, chili powder, cumin, oregano, cottage cheese, corn, chili and cooked rice. stir this mixture in with the onions and peppers. cook until heated through. transfer to a 2 quart casserole
- Preheat oven to 350 degrees f (175 degrees c).
- Bake in preheated oven for 20 minutes
