Aromatic Pilau recipe - How to make Aromatic Pilau

1 1/2 cups long grained rice (basmati)
2 tbsp ghee
1 onion, chopped
3 pods of cardamom (elaichi)
3 black peppercorns (kalimirch)
3 cloves (laung / lavang)
1 tsp cumin seeds (jeera)
1/2 stick of cinnamon (dalchini)
1/2 tsp turmeric powder (haldi)
2 cups boiling water or Vegetable Stock
1/3 cup raisins (kismis)
2 oz frozen green peas
1/4 tsp toasted almond (badam) slivers
salt and black pepper (kalimirch) powder to taste
onion rings to garnish
Method
- Place the rice in a strainer and wash well under cold running water, drain.
- Heat the ghee in skillet add the onion and spices and fry for a minute.
- Stir in the rice and mix until coated, then add the boiling water or stock and season with salt and pepper.
- Bring to a boil, stir and cover, reduce heat and cover for 15 min.
- Add raisins and peas, cover and leave to stand for 15 more min.
- Uncover, fluff up with a fork and stir in the tasted almonds.
- Garnish with onion rings.
