Ingredients


For The Chawli Beans Bajra Paratha
1 cup bajra (black millet) flour
4 tbsp whole wheat flour (gehun ka atta)
1 tsp coconut oil or oil
salt to taste

For The Stuffing
2 cups finely chopped long beans (chawli bhaji)
1 tbsp roughly chopped green chillies
2 tbsp roughly chopped garlic (lehsun)
4 tbsp chopped coriander (dhania)
a pinch of asafoetida (hing)
2 tsp coconut oil or oil
salt to taste

Other Ingredients
whole wheat flour (gehun ka atta) for rolling
oil for cooking

  1. Combine the chawli, green chillies, garlic and coriander in a mixer and blend to a coarse paste without using any water.
  2. Heat the coconut oil or oil in a broad non-stick pan, add the asafoetida, ground chawli mixture and salt, mix well and cook on a medium flame for 2 minutes, while stirring continuously.
  3. Remove the pan from the flame and allow it to cool.
  4. Divide the mixture into 4 equal portions. Keep aside.

  1. To make {span class="bold1"}chawli beans bajra paratha{/span}, divide the dough into 8 equal portions.
  2. Roll the dough into a 150 mm. (6”) diameter circle using a little whole wheat flour for rolling.
  3. Place a dough circle on a flat, dry surface and spread a portion of the filling over it.
  4. Place another dough circle over it and seal it tightly by patting down with your hand.
  5. Heat a non-stick tava (griddle) and cook the paratha, using little coconut oil or oil, till it turns golden brown in colour from both the sides.
  6. Repeat steps 2 to 5 to make 3 more paratha.
  7. Serve chawli beans bajra paratha immediately.

  4. Add salt to taste. We added 1/4th tsp salt.
  5. Gradually add enough water to make a soft dough. We added 1/3rd cup water and then 2 tablespoons water.
  6. Knead into a soft dough.
  7. Cover the dough till the filling is made. This prevents the dough from drying out and prevents the paratha from getting stiff.

  10. Mix well.
  11. Cook on a medium flame for 2 minutes, while stirring continuously.
  12. Remove the pan from the flame and allow it to cool. Divide the mixture into 4 equal portions. Keep aside.

  3. Roll the dough into a 150 mm. (6”) diameter circle using a little whole wheat flour for rolling.

  6. Seal the paratha by pressing down with your fingers over the centre and edges of the paratha. We are flattening the paratha.
  7. Heat a non-stick tava (griddle).
  8. Place the uncooked paratha on the tava. Note the paratha is fragile as its made from bajra  so place it gently on the tava. Expect cracks while cooking this delcious paratha.
  9. Cook paratha for 30 to 45 seconds on a medium flame and flip over.
  10. Grease the top of the paratha with oil. 
  11. Use a spatula to press down to cook paratha evenly. 
  12. Flip and cook till golden brown on both sides. Your paratha is ready. 
  13. Place chawli bajra paratha on a serving plate. 
  14. Serve chawli beans bajra paratha immediately.
